Easy egg hash

This is a super simple dish that you can throw together with most of the veggies you happen to have on hand. In this particular version I used onions, mushrooms, potatoes, and bell peppers. This is a great option for breakfast because it gets you protein, complex (starchy) carbs, and a serving of veggies, and some healthy fats.

1 T high heat oil (avocado is what I use)

1 c diced veggies of your choice

1/2 c potato

2 eggs

1 T avocado

2 T salsa

Preheat oil in a saute pan. Dice the veggies (including potatoes). Add potatoes to heated oil and cook until just about fork tender. When potatoes are almost done add in the rest of the veggies and cook for an additional 4-6 minutes. When veggies and potatoes are cooked all the way through remove from pan. Add in a spray of oil or another teaspoon. Fry your eggs to your preferred doneness. You could also poach the eggs if you prefer them that way. Top with avocado and salsa and enjoy!
